Couscous salad with salmon
This one is as simple as it gets. Pour hot water over couscous, wait a couple of minutes, and then add the rest of the ingredients: onion, smoked salmon, feta cheese, cucumber, and your dressing of choice.
Greek salad
Give the classic Greek salad a fun twist by using quinoa as your base for more protein. Add cucumber, tomatoes, red onion, olives, and feta cheese with your preferred dressing. You can find pre-cooked ready to eat quinoa in most supermarkets.
Latin bowl
Are you in the mood for some Latin vibes? This is the one for you. As well as quinoa, you can find ready-to-eat rice and beans in the supermarkets. Use them as a base and go wild with your favorite toppings: corn, avocado, red onion, cilantro, chips, cheese, and sour cream.
Lentil salad
Get a ready-to-eat lentils container, throw it in a bowl and add some parsley, cherry tomatoes, cucumber, red pepper, and the secret ingredient: mint. If you let it sit for 30 minutes, the flavors of all ingredients will meld, and you will fall in love with it!
Sandwiches and Wraps
Avocado Wrap
Got leftover avocado from your Latin bowl? Use it for these tasty wraps. Just get one big tortilla, add some avocado -or guacamole spread-, some turkey breast or chickpeas, arugula, and peppers.
Caprese Sandwich
Build a caprese-inspired sandwich by stacking basil, tomatoes, and thick slices of fresh mozzarella on a baguette. If you’re feeling fancy, you can also add a bit of pesto. Bellissimo!
Roast beef Wrap or sandwich
Spread some cream cheese on your choice of bread or tortilla. Lay out the roast beef evenly. Add some romaine lettuce or spinach, some strips of tomatoes and cheddar cheese. Ready for a tasty bite!
