3 tasty student meals that make the best leftovers for lunch

Cooking healthy meals doesn't have to take a lot of effort. And prepping a delicious lunch for the next day is a great way to save time and money when you're out of the house and studying. Whether you're skilled at cooking or just starting out, it’s always handy to have a few go-to recipes that are easy, nutritious, and perfect for leftovers. These 3 tasty meals are perfect for students on the go and make the best leftovers for lunch!  

Simple pasta pesto 

You can't really go wrong with pasta. It's versatile and you can make it as simple or as difficult as you like. Pasta is a true go-to meal that requires minimal effort and ingredients! 

Ingredients per portion: 

  • Between 75-125g pasta (pick your favorite!) 
  • 2 Tbsp of store bought or homemade pesto 
  • Salt and pepper to taste 

Add-ons: 

  • Grated Parmesan cheese (as much as you like) 
  • Prepare some chicken or spinach for more protein, and peas, tomatoes or zucchini for more vegetables 

Instructions:  

  • Boil the pasta until al dente, then drain 
  • Toss the pasta with pesto and mix well 
  • Add your toppings

Instant couscous bowl 

No stovetop? No problem! This one's made with just an electric kettle! Couscous is a great option if you're a beginner cook, ‘cause you can't really go wrong with it. Couscous bowls are great for eating warm or cold, so you can have your leftovers the next day for lunch!  

Ingredients (per portion) 

  • 60-80 grams couscous 
  • 90ml boiling water 
  • ½ stock cube 
  • (pre) chopped vegetables of your choice, like bell peppers, cucumber, avocado, or tomatoes 
  • 1 tbsp olive oil 
  • Salt and pepper to taste  

Add-ons 

  • You can make your couscous bowl even more filling by adding beans, chickpeas, feta, or shredded chicken 

Instructions:  

  • Add the couscous into a bowl and pour over the boiling water  
  • Crumble in the stock cube and stir. Cover the bowl with a plate and let sit for 5 minutes.  
  • If you haven't bought pre-chopped vegetables, chop them in this step.  
  • Then fluff your couscous with a fork, add your vegetables, oil, and toppings of choice

Filling Greek salad   

Now that spring is on its way, it's the perfect time to enjoy a healthy, filling salad. This twist on a traditional Greek salad for if you're feeling like something refreshing. Eat it as-is or with some pita bread!  

Ingredients (per portion): 

  • ½ Cucumber 
  • A handful of cherry tomatoes (halved) 
  • ½ Green bell pepper 
  • ½ Red onion 
  • 3 tbsp Greek yoghurt 
  • 1 stp olive oil 
  • Juice of ½ lemon 
  • Salt and pepper to taste  

Add ons 

  • Make the salad more filling by using kalamata olives, feta cheese, chickpeas, and fresh parsley 

Instructions:  

  • Chop all your vegetables finely and mix them in a bowl 
  • Add the greek yoghurt, olive oil, lemon juice and salt & pepper 
  • Add your toppers, and voila!
